Make this easy Garbanzo Chicken Salad for a quick and healthy school lunch or after-school snack. Serve in a pita or on your favorite bread.

  • 2 cups cooked chicken breast
  • 1 oz 14- jar Garbanzo beans
  • 1 cup seedless grapes
  • 0.5 cup diced celery
  • 2 scallions
  • 0.25 cup parsley leaves
  • 0.33333333333333 cup mayonnaise
  • juice of ½ lemon
  • optional: Salt and pepper to taste


  1. In a large bowl, combine all the ingredients and mix well. Season with salt and pepper if desired. Serve immediately or chill in the fridge before serving. Serve as a salad or as a sandwich in some pita or over your favorite bread.
